Description
Red sweet potatoes, known as yams, Sweet Potato, Shakar Kandi, Shakarkandi, or Shakarkand, are tuberous roots of the Ipomoea batatas plant, popular in the cuisines of many regions of the world, including India and other South Asian countries. Despite the term "sweet potato," the yam is not a variety of the common potato – it belongs to a different botanical family and is distinguished by its characteristic naturally sweet flavor. The term "red" primarily refers to the outer color of the skin of the offered product; the exact color of the flesh may depend on the variety and specific batch, so one should not assume that every red yam has orange flesh. Shakar Kandi is a popular name used on the Indian subcontinent, where yams are used both in home cooking and as an ingredient in popular snacks. After heat treatment, the flesh becomes soft, and its natural sweetness is more noticeable. Yams can be boiled in water or steamed, baked whole or in pieces, fried, grilled, and prepared as a puree. They are suitable for curry, vegetable dishes, soups, stews, salads, fillings, and various types of snacks. They can be cut into cubes, slices, wedges, or fries and baked with spices. In Indian cuisine, shakar kandi is, among other things, a popular ingredient in chaat. Cooked or baked pieces of yam can be combined with lemon or lime juice, chili, chaat masala, cumin, salt, and fresh herbs, creating a characteristic combination of sweet, sour, salty, and spicy flavors. Yams also pair well with ginger, garlic, coriander, cumin, paprika, chili, and other aromatic spices. Thanks to their natural sweetness, they can be used not only in savory dishes but also in some desserts and sweet dishes. Before preparation, the tubers should be thoroughly washed and cleaned of soil residues. Depending on the recipe, they can be peeled or prepared with the skin after very thorough cleaning. Yams are a fresh agricultural product, so individual tubers may vary in length, thickness, shape, skin shade, surface texture, and flesh color. Small surface abrasions and irregular shapes may result from harvesting and transport and do not necessarily indicate a deterioration in product quality.
