Description
Fresh shallot onion, known as Shallot or Small Onion, is a small onion widely used in Asian cuisines and many other regions of the world. In trade, the terms Small Onion and Shallot are sometimes used to refer to small onions especially common in Indian and South Asian cuisine, so the exact variety of a particular batch should be identified based on the supplier's labeling. Shallots are distinguished by their small size and characteristic onion aroma. After peeling, they can be used whole, cut in half, sliced, or finely chopped, depending on the dish being prepared. During frying and stewing, the onion gradually softens, and its flavor becomes milder and sweeter. Small Onion is particularly valued in South Indian cuisine, where small onions are an ingredient in numerous curries, sambars, chutneys, sauces, and vegetable dishes. They can also be found under regional names related to small onions used in Tamil and other South Indian cuisines. Shallots pair well with garlic, ginger, chili, tomatoes, coconut, tamarind, curry leaves, mustard seeds, cumin, coriander, and other aromatic spices. They can be sautéed as a base for dishes, stewed in sauce, added whole to curry or sambar, and also used to prepare marinades and chutneys. Their small size makes whole peeled onions suitable for dishes where the onion should retain its shape during cooking. Outside Indian cuisine, shallots are commonly used in many Asian cuisines, including wok dishes, sauces, spice pastes, marinades, and fried accompaniments. They can also be used in European cuisine as a flavorful base for sauces, soups, and stewed dishes. Raw shallot has a more pronounced character, so it can be finely chopped and used in salads, sauces, and other cold accompaniments if the chosen recipe calls for it. The product should be peeled of its dry outer skin and any damaged parts removed before use. Due to the natural character of the fresh vegetable, individual onions may vary in size, shape, skin color, aroma intensity, and pungency.
