Description

Wild yam offered as Wild Yam Root is a fresh tuber from the Dioscorea genus, which includes numerous yam species used as food in various parts of the world. The term "Wild Yam" is sometimes used in trade for different species, so without a botanical designation of a specific batch, one should not assign the product to a single species such as Dioscorea villosa, Dioscorea alata, or Dioscorea cayenensis. This is particularly important because individual species may differ in appearance, taste, preparation methods, and edibility. Edible yams are a traditional ingredient in the cuisine of many regions of Africa, Asia, the Caribbean, and Oceania. The tubers usually have a thick, rough skin and a firm, starchy flesh, the exact color of which may depend on the species and variety. After proper heat treatment, the flesh softens and can achieve a consistency similar to other starchy root vegetables. Yams can be—if the specific species is intended for culinary use—boiled, stewed, baked, or fried, and after cooking, mashed into a puree. They can be an addition to curry, soups, stews, and other one-pot dishes. Cut pieces combine well with onion, garlic, ginger, chili, tomatoes, cumin, coriander, turmeric, and other spices. In many culinary traditions, yams serve as a filling, starchy component served with sauces, vegetables, legumes, meat, or fish. Wild yam should not be confused with Elephant Foot Yam, Amorphophallus paeoniifolius—despite the presence of the word "yam" in English names, these are botanically different plants. It should also not be automatically equated with sweet potato, Ipomoea batatas. Before preparation, the tuber should be thoroughly washed, coarsely peeled, and any damaged parts removed. For edible yam species, proper heat treatment is important because some Dioscorea species contain natural substances that in raw or insufficiently prepared products may cause irritation or other undesirable symptoms. For this reason, the product should not be treated as intended for raw consumption.
