Description
Tasty Nibbles Malabar Tamarind is a traditional souring agent from southern India, known in Kerala as kudampuli (Garcinia gummi-gutta). These are dried and slightly smoked skins of the fruit, which give dishes a pure, citrusy-sour note with a delicate, smoky accent. Unlike the popular tamarind paste (Tamarindus indica), Malabar tamarind has a more savory, "clean" profile and does not bring caramel sweetness, making it ideal for enhancing the flavor of fish and seafood without overwhelming their delicacy. It is a key ingredient in classic Kerala fish curry, but it also works great in vegetable dishes, lentil dishes, pickles, and marinades. To use, rinse 2–3 pieces, soak them in warm water for 10–15 minutes; add both the soaked skins and the resulting infusion during the simmering stage. You can easily adjust the intensity by the number of pieces and cooking time, and you can remove the skins before serving. Malabar Tamarind pairs excellently with coconut, chili, curry leaves, mustard, and garlic, bringing a clear acidity and depth of umami to sauces. The Tasty Nibbles product stands out for its careful selection and drying process that preserves the aroma and natural color. Store in an airtight container, away from moisture and light; if the skins soften, simply dry them slightly. It is an indispensable addition when you want to give dishes a South Indian character without using vinegar or lemon, while still maintaining lightness and clarity of flavor.
