Description

Aiva Mamra Puffed Rice is a light, crispy puffed rice, known in India by many regional names, including mamra, murmura, muri, or kurmura. It is made by properly processing rice grains to increase their volume and achieve a characteristic light, porous, and crispy structure. Puffed rice is a popular ingredient in Indian, Bangladeshi, and other South Asian cuisines, where it is used both in simple snacks and more elaborate mixes with vegetables, spices, nuts, legumes, or chutneys. One of the most recognizable uses of mamra is bhel puri – a popular Indian chaat snack, in which crispy rice is combined with vegetables, chutneys, spices, and other crunchy additions. Puffed rice can also be used to prepare namkeen and chivda mixes, where it is combined with spices, roasted ingredients, and additions selected according to a specific recipe. In Bengal, puffed rice known as muri is a popular ingredient in everyday snacks and can be combined with onion, chili, spices, and other additions. Thanks to its neutral taste, mamra easily absorbs the aroma of other ingredients, making it a base for spicy, salty, and sweet compositions alike. It can be eaten as a crispy snack, added to breakfast mixes, or used to prepare traditional sweets, where puffed rice is combined with sugar, jaggery, or another binding ingredient according to the recipe. The product is much lighter in volume than regular rice and should not be treated like raw rice intended for classic cooking in water. Its main feature is the ready, aerated, and crispy structure obtained during the puffing process. Puffed rice easily absorbs moisture from the environment, which can quickly cause it to lose its crispness, so it is especially important to store it in a dry place and seal the package tightly after opening. Aiva Mamra Puffed Rice is a versatile ingredient for those preparing bhel puri, chaat, namkeen, chivda, and other traditional snacks of Indian and South Asian cuisine.
